Creamy Cilantro Sauce Recipe: The Complete Fresh Herb Sauce Guide

F&B Knowledge Series • By Nigel A. Thomas • 31 October 2026

Few sauces do as much work for so little effort as creamy cilantro sauce. Fresh herbs, a little heat, garlic, lime and a creamy base blend into a bright green sauce that lifts grilled meat, fish, vegetables, rice bowls and fried snacks. After many years in hotel, resort and restaurant kitchens, I keep coming back to sauces like this one: eight ingredients, one blender, five minutes, and a result guests remember. This guide covers the recipe, the reasoning behind each ingredient, the method, kitchen tips, ways to serve it and safe storage.

Ingredients

IngredientAmountRole in the sauce
Fresh cilantro2 cupsMain herb, bright and citrusy
Fresh parsley1 cupClean, grassy balance
Jalapeño, seeded1Gentle heat and fresh flavour
Garlic3 clovesSavoury depth
Lime juice¼ cupAcidity and brightness
Sour cream or Greek yogurt¼ cupCreamy body, mild tang
Olive oil½ cupRichness and smooth texture
Salt½ tspSeasoning that lifts every flavour

Method

  1. Wash the cilantro and parsley, then dry them thoroughly. Wet herbs water the sauce down.
  2. Add the herbs, seeded jalapeño and garlic to a blender.
  3. Add the lime juice, sour cream or Greek yogurt and salt.
  4. Blend in short bursts, scraping down the sides, then pour in the olive oil while blending until smooth.
  5. Taste. Adjust salt, lime or heat, and loosen with a spoonful of cold water if you want a pourable sauce.

The quantity is roughly 1 to 1½ cups, depending on how tightly the herbs are packed.

Why each ingredient matters

Cilantro and parsley

Cilantro carries the signature flavour. Parsley rounds it off, adds body and softens the soapy note some guests notice in cilantro. Tender stems are fine and carry flavour, but trim thick, woody parsley stems.

Jalapeño

Most of the heat sits in the seeds and white membranes, which is why the recipe seeds the pepper. You keep the grassy pepper flavour with only a gentle kick. A serrano gives more heat if you want it.

Garlic

Three raw cloves give the sauce its backbone. Raw garlic is strong, so start with fewer cloves if the sauce will sit overnight, since the flavour deepens.

Lime juice

Acid keeps the sauce lively and cuts through rich food. Lemon works in a pinch, though lime suits the cilantro better.

Sour cream or Greek yogurt

Greek yogurt is lighter and tangier. Sour cream is rounder and richer. Either one turns a thin herb blend into a creamy sauce that clings to food.

Olive oil

Oil carries the flavour and gives the sauce its smooth, glossy finish. Use a mild extra virgin oil, since a very peppery one can dominate the herbs.

Kitchen tips

Ways to serve it

Serve it with tacos, grilled chicken, shrimp or fish, roasted vegetables, burritos, rice bowls and fried eggs. Thin it with a little water or extra lime juice for a salad dressing, or keep it thick as a dip for chips and vegetables. It also pairs very well with crispy snacks such as our chicken nugget recipes, and it makes an easy, colourful dip for a platter of cold appetizers. If you love building sauces, compare it with our best burger sauce recipe for a very different, richer style of sauce.

Storage and food safety

This sauce contains dairy and raw garlic blended into oil, so treat it as a temperature-controlled food. Refrigerate it at 5°C (41°F) or below in a clean, airtight squeeze bottle or container, label it with the date, and use it within 3 to 4 days. Never store it at room temperature. During service, keep it on ice or in a chilled well, and discard anything that has been out for too long. Shake or stir before serving because it can separate slightly. Because it contains dairy and garlic, label it for allergens and guests with intolerances.

Frequently asked questions

How long does creamy cilantro sauce keep?

Because it contains raw garlic blended into oil and dairy, keep it refrigerated at 5°C (41°F) or below and use it within 3 to 4 days. Never leave it at room temperature.

How do I keep the sauce bright green?

Dry the herbs well, blend in short bursts so the sauce stays cool, and make small batches. Acid slowly dulls the colour, so add the lime juice just before blending and serve fresh.

Can I make it dairy-free?

Yes. Swap the sour cream or Greek yogurt for an unsweetened plant-based yogurt or blended soaked cashews, and taste again for salt and acid.

How do I make it milder or hotter?

Most of the jalapeño heat sits in the seeds and white membranes. Keep them out for a gentle sauce, or add a little membrane back to taste.
